1 Reuben Burger

To make this burger, you will need:
- 1 cup texturized vegetable protein
- 1 1/2 cups wheat gluten
- 2 tablespoons tomato paste
- 1/ 2 cup minced onion
- 1/2 cup dill pickle juice
- 1 1/2 cups sauerkraut, heated
- 1/3 cup vegan Thousand Island dressing
- 1 1/3 cups hot water
- 1 tablespoon canola oil
Mix the water and texturized vegetable protein. Stir in the wheat gluten, onion, and Reuben spice blend. Then add the tomato paste, pickle juice, and oil. Knead this together into a crumbly dough.
Form the ‘dough’ into patties and wrap them in foil. Then steam them for about an hour. It is best to refrigerate for another hour to produce the correct texture. Next, fry for about 5 minutes until the burgers are brown and crispy.
To make the spice mix simply blend 2 teaspoons each of ground coriander and allspice, garlic powder, onion powder, and paprika. Also, add 1/2 teaspoon each of caraway and fennel seeds. Add pepper to taste.
